De forma xen\u00e9rica, d\u00edcese que se remonta \u00e1 \u00e9poca romana. Os disfraces tradicionais da zona te\u00f1en un significado na cultura medieval. Pero sobre todo, al\u00fadese \u00e1 orixe pagana de rituais da poblaci\u00f3n castrexa, na li\u00f1a de despedida do inverno e benvida \u00e1 primaveira.<\/p><p>Cabe supo\u00f1er que o desenrolo do Entroido de Vilari\u00f1o de Conso foi a par de outras localidades pr\u00f3ximas, como Viana do Bolo, Manzaneda e incluso Xinzo de Limia, e que a orixe da festa retrotr\u00e1ese a esas festividades paganas asociadas ao cambio de estaci\u00f3n, con referencias romanas, celtas ou gregas. Estas citas posteriormente sufriron o influxo do cristianismo \u00e1 hora de fixalas no calendario e de sumar determinados ritos, pero mantendo o seu car\u00e1cter de grupal ou representada a trav\u00e9s da Asociaci\u00f3n Xuntos polo Fuli\u00f3n, que colabora coa organizaci\u00f3n de parte dos actos destas datas.<\/p><p>Esta asociaci\u00f3n, creada no 2013, naceu para conservar e manter o patrimonio cultural e natural de Galicia, e en concreto, o de Vilari\u00f1o de Conso.<\/p><p>A Asociaci\u00f3n Cultural Social, Deportiva, L\u00fadica, Ecol\u00f3xica, da Muller, de Inclusi\u00f3n, do Rural, Vive Vilari\u00f1o, creada en 2019, naceu co obxectivo de potenciar as tradici\u00f3ns culturais da zona, entre as que se atopa o seu XXXVI edici\u00f3n, a Festa do Cabrito consol\u00eddase como un dos eventos centrais do Entroido de Vilari\u00f1o de Conso.<\/p><p>Esta celebraci\u00f3n comezou en 1988, un ano no que o excedente deste produto obrigou a pensar unha alternativa para darlle sa\u00edda. Elixiuse o carnaval como data para a festividade por tratarse dunha \u00e9poca na que habitualmente este alimento rexistra baixas vendas.<\/p><p>Ao longo das d\u00e9cadas, a Festa do Cabrito foise consolidando con pequenas modificaci\u00f3ns: se nos seus comezos celebr\u00e1base o Domingo Gordo ou Domingo de Entroido, nos \u00faltimos tempos desprazouse ao s\u00e1bado. Isto \u00e9 as\u00ed para evitar solaparse cos festexos de Viana do Bolo e Manzaneda, localidades coas que Vilari\u00f1o est\u00e1 a promover unha celebraci\u00f3n conxunta baixo a clave do \u201ctri\u00e1ngulo m\u00e1xico\u201d do Entroido no Macizo Central da provincia de Ourense.<\/p><p>Ao car\u00e1cter gastron\u00f3mico da festa \u00faneselle o legado cultural. O cabrito \u00e9 un dos animais tradicionais da zona, que ten un dos puntais cl\u00e1sicos da s\u00faa econom\u00eda no pastoreo de alta monta\u00f1a, unha actividade que se mant\u00e9n actualmente en poucos concellos de Galicia. Ademais, este alimento coc\u00ed\u00f1ase asado no caracter\u00edstico forno de le\u00f1a, como leva facendo desde hai role=\"region\" aria-labelledby=\"elementor-tab-title-8151\"><p>Esta figura do Entroido de Vilari\u00f1o de Conso entronca coa tradici\u00f3n doutros protagonistas de carnavais na provincia de Ourense. Cada aldea de Vilari\u00f1o ten un boteiro propio, un home ou muller da localidade.<\/p><p>A s\u00faa vestimenta caracter\u00edzase por unha elaborada camisa branca, adornada con cintas de raso de distintas cores cosidas formando pregos, sobre a que levan a gravata. Os pantal\u00f3ns son de raso vermello con flocos cosidos, cun cinto con chocallos.<\/p><p>A m\u00e1scara componse de careta, con bigote, patillas e barba, e unha pantalla de forma rectangular con debuxos que var\u00edan en cada parroquia. Aqu\u00ed repres\u00e9ntanse distintas pezas sat\u00edrico-burlescas, xeralmente en verso, na que participan unha ou varias persoas disfrazadas.<\/p><p>Un mestre ou mestra de cerimonias enc\u00e1rgase de presentar e fiar as distintas pezas, as\u00ed como de despedir o acto, pedindo desculpas por se algu\u00e9n se ofendeu pola foliada.<\/p><p>Esta representaci\u00f3n \u00e9 t\u00edpica da provincia de Ourense. O xoves desa semana \u00e9 o Xoves de Compadres, que vir\u00eda ser nove d\u00edas antes do S\u00e1bado de Entroido. Aqu\u00ed, as mulleres colgan un boneco vestido con roupas dos homes da vila, que estes deben tentar baixar. No primeiro, as mulleres elaboran o lardeiro, un boneco, tradicionalmente de palla, vestido con pezas de roupa que se encargaban de roubar aos homes da vila. Na seguinte semana \u00e9 a quenda da lardeira que, esta vez, preparan os homes e visten con roupas das mulleres de Vilari\u00f1o.<\/p><p>Lardeiro e lardeira c\u00f3lganse nun dos puntos m\u00e1is altos da localidade. Habitualmente estas figuras mant\u00e9\u00f1ense expostas durante as festas de Entroido ata que o Martes de Entroido se queiman para enterrarse no M\u00e9rcores de
